White Truffle Season in Alba

Alba is a small medieval town in northern Italy, about an hour from Turin, at the heart of the Langhe hills, home of the white truffle, Tuber magnatum. Each autumn, hunters and their trained dogs slip into the oak and poplar woods at dawn to find what grows underground and gives itself away only by scent. The prize is shaved raw, never cooked, over tajarin or risotto. The season opens in October with the town's International White Truffle Fair, held on weekends through the autumn.

The white truffle is a delicacy that must be eaten at the source. Its aroma fades within days, so the shaving over pasta in Alba is a different food from anything exported. You can join the hunt: local trifolau lead morning walks with their dogs into the woods, often ending with Barolo tasting where the wine is made. And October brings the double harvest. Nebbiolo grapes for Barolo are picked in the same weeks the truffles come up, while the UNESCO listed vineyard hills turn to autumn color.
